An air knife turns blower air into a thin, high-velocity sheet through a narrow slot to strip water, blow off debris or separate parts as product passes underneath. The trick is that a blower does this far more efficiently than compressed air: a ring blower delivers a large volume of low-pressure air continuously, and the knife's converging slot accelerates it into a hard curtain. So the duty is steady flow at a moderate positive pressure — enough to hold slot velocity across the full knife length. Single-stage ring blowers suit most drying and blow-off knives; longer knives or higher line speeds want the extra head of a two-stage or high-pressure ring blower.
